Winter warmer – Spicy Parsnip Soup
One of my childhood favourites and truly comforting in bleak weather. As it’s packed full of immune system – boosting ingredients, you’ll be helping to keep Winter viruses at bay.
Ingredients
A bag of parsnips (about 7 x medium parsnips)
3 x medium carrots
1 onion
5 cloves of garlic
An inch cube of fresh ginger, peeled and grated
Two cubes of chicken stock / stock pots.
Half a teaspoon of cayenne pepper
A teaspoon of ground cumin
Half a teaspoon of garam masala
A dash to half a tin of coconut milkĀ
Salt and pepper to taste
Fresh coriander and dried chilli flakes to garnish
Method
Finely chop onion, garlic and fry with ginger in olive oil until softened. Add dried spices and fry for another minute until aromatic.
Add peeled and sliced carrots and parsnips. Add boiling water until just covered and simmer until soft – approx 15 mins. Add chicken stock and amount of coconut milk preferred. Whizz up with a hand held blender and season to taste. Serve with chopped coriander and chilli flakes. If you prefer not to have the soup with buttered toast, I recommend enjoying it with a lump of cheese – extra mature cheddar or stilton. Scrumptious!
